CO Proud School Meal Day

Happy CO Proud School Meal Day, D6!

Many factors, including extreme weather, have negatively impacted farmers making it very important to us to support specialty crop agriculture in Colorado. Supporting local farmers contributes to our local economy and allows our students to eat fresh, nutrient-dense lunches. Students also learn more about the connection between the food on their plate and where it comes from, gaining an appreciation for Colorado agriculture!

For CO Proud School Meal Day, Greeley-Evans School District 6 Nutrition Services is serving Proud Bison Enchiladas with mole sauce and a side of cilantro lime rice. The salad bars will also proudly represent CO produce. 

Bison represent the Colorado landscape before western settlers and their impact on the ecosystem. The prairies that surround Greeley were the natural habitat for bison, and they were a staple food source for the indigenous people of Colorado. Bison, nixtimal, and dried chiles have been a part of our landscape for many generations.

This delicious menu represents some of the best of CO agriculture, and is a tribute to our state and history. The bison comes from Rock River Ranches located less than an hour away from Greeley. 

We are thankful for the hard work and dedication of our Nutrition Services team for giving our students the opportunity to taste and learn more about local bison!
